Look what came in my ParadiseO box this week!
Been super jealous of Bibliocook, who has relatives sending her yummy fair trade chocolate packages. Well — I have ParadiseO. Their twice monthly deliveries are the closest things I get to care packages –
And for October, they thoughtfully sent me a cute lil pumpkin, along with a baked pumpkin recipe that incorporated a lot of the veggies in the package — zucchini, onion, etc.
Of course, the box didn’t have everything — I decided pasta shells were just optional (This is why I’m not green LA cook). I did, however, substitue the veggie broth and ginger root with an indeterminate amount of VegIt! seasoning and ginger powder.
And voila!
The look? Fascinatingly orange. The taste? Totally interesting. Actually, it was pretty good — just needed salt, which I also don’t have in the house.
And for some funny info on what NOT to do with a pumpkin, even if you really, really think there’s no one around, visit Ramblings from the Desert –

We had mashed pumpkin the other day. I roasted the other half of it and am adding it to a mushroom barley soup in cubes, I think.
Without really intending to, we’re eating about 90% vegetarian these days to save money. Doesn’t suck…

Yummy and economical :) Also, our skin looks better!

Wow, I’m really impressed. Although it looks a little bit like the pumpkin’s intestines are coming out. =)

Hey Jen — I get that comment a lot — you know, from people unfamiliar with veggies ;)
