A great green publisher in Canada is New Society Publishers (http://www.newsociety.com). They have committed to publishing all of their books on ancient forest-friendly, 100% Post Consumer Waste recycled paper since 2001, and have recently gone carbon neutral.

They have some great books out, including one of my personal favorites, "The Post Petroleum Survival Guide and Cookbook" by Albert Bates.
