  2. Sounds great, but how is this interesting? You just use the organic version of ingredients to bake rather than the non-organic. Really, a no-brainer. Why would you need a cookbook to explain that to you?
    On the other hand, the green-washing aside, if the book explains how to do the parts of fancy baking that stump beginners, then it’s a good investment.

  3. sue — That’s totally the first thing I thought of when I saw the book! :) Then I remembered that a lot of cake / cookies cookbooks will list ingredients that aren’t easily organic-isable — i.e. calling for Hershey’s Choco syrup, that sort of thing. Also, the cookbook’s more about using fresh, seasonal ingredients — i.e. recipes using fresh fruit instead of a lot of conventional recipes that call for canned, etc.

    Creative, experienced cooks can generally work around the conventional recipes — not so the novices….

Siel, in terms of something like “I remembered that a lot of cake / cookies cookbooks will list ingredients that aren’t easily organic-isable — i.e. calling for Hershey’s Choco syrup,” I think quite a few recipes that call for specific name brands do it because the recipe is created by a larger company that intentionally sticks its own labels in there. There’s nothing special about Hershey’s that you can’t get with other syrups, including just using melted chocolate and cream, both organic — but it does take a little cooking know-how to figure out how to do that correctly, and a book that gave readers that knowledge would be useful.

  19. I love the idea of bringing simplicity back to baking. There are so many ingredients, even IN ingredients, that aren’t close to being food that it’s no wonder we get sick. I’m excited by the idea of fun, yummy treats like Red Velvet Love Cake!

  22. that book sounds great, but you know what sounds better? i’d love a good book on how to bake good, yummy appetizing things without using processed sugar (think honey and agave), wheat or dairy. something with recipes similar to deserts at M Cafe…
