On Frey – please watch the sulfite free tag! They can still pump in up to 50ppmSO2/volume to qualify as organic.Sulfites occur naturally in wine and it’s the amount of “free sulfites” in a wine that stop it oxidizing. So I doubt they strip all the sulfites out.
With my own wines, I don’t add yeasts (get it from the skins), don’t add sugars (just select good Brix levels in my grapes), I don’t add acids or carbonate or potassium busilfite, no glycerin, no bentonite etc etc etc and this year the Bordeaux yielded 45ppmSO2/volume and the SanGiovese/Mystery Variety yielded 50ppmSO2/volume.
You can’t get mor enatural than what I do , so how they get 0 sulfites is a mystery to me.

Hey Paolo — I have no sulfite allergies, so am not all that concerned with the added sulfites, to be honest. I’m more into the organic grapes… but I can see how someone who’s allergic to sulfites might be concerned about the issues you bring up –
