Eating less meat’s the biggest way you can lower the carbon footprint of your diet, so for environmentalists who love Ethiopian food, Rahel Ethiopian Veggie Cuisine makes a tasty eco-dining choice.

At Rahel’s, you can get vegan versions of traditional Ethiopian dishes. I tried the Veggie Paradise Combo Special, which let me sample eight different items — from yemisir kik wot (split lentil stew) to an Ethiopian salad — all served on Injera, a spongy sourdough flat bread. The food was flavorful and very filling, the atmosphere very homey, and the prices very reasonable!
Get there between 11 am and 3 pm, and you can take advantage of the all-you-can-eat lunch special for $7.95.

According to the owner and chef Rahel Woldmedhin, some of the produce and other ingredients used are organic. The locally-made vegan desserts too are made of flour — though these German chocolate and coconut cakes are obviously not Ethiopian recipes.
My own dessert ended up being the mango juice, a fresh drink with a thicker-than-a-smoothie consistency that I considered eating with a spoon.
