I drink "Tequiza" a beer that has the Blue Agave Nectar in it. I drink it for medicinal purposes as it seems to clear my mind if I'm scattered. I haven't tried it as a sweetener, but am looking into other medicinal purposes it may have.

I have agave nectar as well. Many vegans used it because there's no chance of it being processed with bone-char like sugar. It tastes good, is easy to measure, and I believe it's more sustainably produced than sugar.

I noticed after I bought mine that there are different grade, like maple sugar - light, dark, and regular. I suppose it's due to how much the original nectar is processed.

I went to a bakery in NYC last time I was there called Babycakes and they use agave nectar instead of sugar or honey for their baked goods. It was tasty - I couldn't tell the difference.

Not sure if "blue agave" is different than straight up agave nectar, which I use all the time, LOVE it as a sweetener. It has a wonderful flavor, very sweet, kinda mapley/smokey, I use it in tea, baking, or sometimes drizzled on toast w/ a nut butter, yum.
